Ceylon Tea is the brand of Tea which is produced in Sri Lanka, has been described as not only a geographical indication but also has been a pillar of Sri Lankan culture , heritage and identity . In 2019 Sri Lanka was the fourth largest tea producer and the third largest tea exporter in the world.
The market for pure teas such as “pure Ceylon Tea” is considered a niche market occupying only 10% of the global market.
More than 50% of the tea exports of Sri Lanka are still in the traditional bulk tea while the value-added tea ( green tea, flavored tea , organic tea, instant tea, iced tea and ready to drink tea ) exports for 40% to 45% of total tea exports.
Tea production is one of the main sources of exchange for Sri Lanka and account for 2%of GDP contributing US $ 2 billion to the economy of Sri Lanka. The humidity , cool temperature and rainfall of the country’s central highlands provide a climate that favors the production of high quality tea.
On the other hand, tea produced in low elevation areas, with high rain fall and warm temperature has high level of astringent properties. The tea industry was introduced to the country in 1867 by James Taylor a British planter who arrived in 1852.
There are a number of organizations both international and local that promote and enforce sustainability standards and certification pertaining to Tea in Sri Lanka.
The first secret is in the art of plucking to ensure the excellence of final product, skilled hands aided by trained eyes pluck only buds accompanied by two leaves sprouting from the springs of each tea bush. These chosen leaves are placed on troughs is dry and wither just as wine is deposited in casks to mature until perfection. Air is circulated to decrease their moisture content to optimum levels to enhance their aromatic flavor. Next they must go through fermentation or the process of oxidation, exposed to air which will brown them to a perfect tan. Then after being blown cold they must be blown hot. They must go through a furnace of fire, pass through a chamber of hot air . Afterwards tea is placed on a vibrating sieve and sorted to size and grades before they are weighed and packed separately to be presented to the world as a pride of Ceylon tea.
