Sri Lankan cuisine is very distinctive an exotic blend of tastes and aromas enriched by ethnic diversity and centuries of interaction with outside world.

From early Arab traders to the European Colonists Sri Lankan food has a wide range of international influences and is in rich in flavors and variety.

A meal with a deceptively simple name that incorporates seven separates dishes. Throughout years of colonization and influence from other countries, Sri Lanka had adopted its food culture into a blend of different curry concoctions and tasty dishes. Sri Lankas love spices, they love food that explodes with flavor.

Rice and curry is the Sri Lankan staple, many Sri Lankan food items have derived from the chena cultivation and the most celebrated and auspicious Sinhala and Hindu New Year to various day to day events and celebrations will see an array of traditional Sri Lankan meals ranging from Milk Rice, sweet meats and spicy curries for accompaniment. Many of these dishes are centered around the main staple rice , rice flour and coconut while sea food as an important part in Sri Lankan cuisine. The curries have immense flavor and colors which are derived from list of Sri Lankan spices that not only add great flavor to the food but also an ayurvedic value to the dish.

Present day Sri Lankan food is a result of local ingredients brought by international trade and its colonial past. Black pepper is native to the island and widely used as a spice in Traditional food in Sri Lanka. When a blend of the proper spices are used in a dish that will create a refreshing aroma and flavor. Heating spices in oils can amplify their fragrance and flavor. Fresh spices smell and taste better than dry or processed one.

Sri Lanka has always been quite famous for the authenticity of its food and the locals have mastered the secrets of spices for years. Food from Southern Indian state Kerala has plenty in common with Sri Lankan cuisine. Sri Lankan food is not for the timid eater- the plenty curries , sweet caramelized onion relish and sour lime pickle are all dominant. Powerful flavors that startle awake senses dulled by the thick hot island air.

Sri Lankan cuisine echoes its history. Situated on the maritime trading routes o the Indian Ocean it has borrowed all sorts of recipes. Together with the countless variations of Rice and Curry, all this exotic fare blends into a unique and very rich cuisine.

The climate of the island is conductive to growing delicious exotic fruits such as papayas, pineapples, bananas and mangoes which grow all year round and mangosteen and rambutan are seasonal. This also applies to the Jackfruit and durian ( which has a disgusting smell ) with delicate flesh which grow in bunches on the trunk of the tree.
